Posada de la Villa

Founded in 1642 on Cava Baja as the first inn of its kind in Madrid, built to feed travellers, pilgrims and merchants arriving at the Court. The kitchen stays with the castizo repertoire: cocido madrileño, callos, rabo de toro, gallina en pepitoria. It had lapsed by the twentieth century and was relaunched as a restaurant in 1980 by Félix Colomo, which is why it is still open at all.
