Bodega de la Ardosa

Founded in 1892 by a Toledo wine merchant who built a network of Madrid tabernas to sell his own barrels, and one source suspects the site is older still. Beer and vermouth on tap are the trade, and the tortilla de patatas is the tapa everything else is measured against. Doors open at 8:30 on weekdays, which makes it a coffee-and-vermouth bar as much as a night one.
