Casa Labra

Founded by an Asturian in 1860 a few steps off Puerta del Sol, and the room where Pablo Iglesias and his circle founded the PSOE in 1879. The counter trade is battered cod and cod croquetas, sold by the piece to a queue that forms on the pavement; the dining room adds rabo de toro and callos. The bacalao rebozado is the recipe the city's gastronomy academy chose to print as its own.
