CAMRA's inventory grades what is physically left of a pub's interior, not the beer or the welcome: three stars for a room that has barely been touched, one for a building where enough original fabric survives to matter. York holds seven of them, two inside the walls on tourist streets and the rest scattered out along Holgate Road, Fishergate and Marygate where the drinkers are local. The useful thing about reading them together is how differently a protected interior behaves, from a pie-and-no-swearing corridor on Fossgate to a street-corner local selling cake at the bar.
