Pharamond

The Art Nouveau interior was inscribed as a monument historique by decree of 4 July 1989 and remains the reason to book. The house dates to 1832 and has fed the Halles quarter ever since, latterly as a bouillon, meaning listed surroundings at bouillon prices. Normandy, not Paris, sets the register of the cooking.
