Cantillon Brewery

A working lambic brewery in Anderlecht that doubles as the Brussels Museum of the Gueuze, preserving brewing methods the rest of the industry abandoned. Tours end with unfiltered, unpasteurised lambic and gueuze tasted where it was made. The spontaneous fermentation that defines the style is native to this valley and this is where you watch it happen.
