Azurite
Mario Ridder, a long career in Dutch kitchens behind him, opened in Delft and was holding two stars within a year. The cooking is French-rooted and the wine list is the owner's own obsession rather than a sommelier's project. Hours are not posted at the door, which makes the booking the only reliable way in.
