La Vucciria
Once the city's main provisions market and now a smaller cluster of stalls and fry counters, La Vucciria keeps the three hardest items of the Palermo offal repertoire in one place: stigghiola, pani ca' meusa, and frittola — the scraps and cartilage left from butchering, slow-cooked and served warm from a covered basket. The frittolaro is the vendor to look for; the dish is rarely sold outside the historic markets. Vehicles are kept out, so the whole thing is walked.
